Thanks to a tried and tested air-conditioning management system, BIGA-STOP Chambers guarantee that during the various work stages doughs undergo perfect preservation and rise naturally.

This maintains the quality and fragrance of the end product and also means that the essential organoleptic characteristics remain unchanged. Moreover, BIGA-STOP makes it possible to work with natural yeasts as well as allowing you to optimise production organisation and control.

All the "Digital Control Panel" version of BIGA-STOP manage and schedule with absolute precision the following production stages thanks to its microprocessor:

  1. Interruption of the dough rising process at + 2°C for about 2 hours.
  2. Dough preservation at + 10°C for the whole scheduled preservation time.
  3. Dough rising from + 18°C to 22°C for about 14/18 hours, in controlled heat and humidity conditions, according to the type of dough, constantly maintaining an optimum pH: 5/5.2 max.
  4. Dough maintenance and preservation at + 10°C (from +35°C to + 10°C in about 15 minutes) for a further 7/8 hours, constantly maintaining the desired pH.

 

MAIN CONSTRUCTION CHARACTERISTICS:

  • Prefabricated modular panels equipped with self-locking hooks inserted in the polyurethane for fast assembly. Foamed rubber seals and plastic profiles (incorporated around the perimeter) guarantee that he panels have a perfect, air -tight seal and that the panels retain their shape through time. Thanks to this solution it is not necessary to use silicone, and we can guarantee that the chamber may be disassembled and reassembled at any time. Assembly times are also drastically reduced.
  • Rigid polyurethane foam insulation: density: 38/42 kg/mc; compression strength: 1.8/2 kg/cm2; heat conductivity at +25°C: 0,075÷0,084 kJ (m x h x K).
  • Refrigerant gases: "R 404" or "R 507".
  • 55 DB monobloc hermetic motors for installed capacities up to 3 HP.70 DB semihermetic motors for installed capacities over 3 HP.
  • Heat insulation: 80 mm thick.
  • Door insulation: 100 mm thick.- Base insulation: 60 mm thick.
  • Stainless sheet steel base: 1,5 mm thick (an additional 3,0 mm thick reinforcement sheet is available for loads exceeding 200 kg per trolley).
  • Sheet stainless steel walls: 0,6 mm thick.
  • Exterior made of plastic coated galvanised sheet metal and interior made of aisi 304 stainless steel. Doors made of aisi 304 stainless steel.
  • Stainless steel clad reinforced insulated base. Hygienic profile around the interior perimeter for impeccable hygiene.
  • Step and interior chamber guards made of aisi 304 stainless steel.

 

MAIN WORKING CHARACTERISTIC:

  • Standard control panel with microprocessor control. Possibility of customising up to 10 working programs.
  • Adjustable working temperature: +5/+30°C.
  • Conditioning system inside the Chamber for optimum temperature distribution.
  • Special acid proof treatment of the modular evaporators.
  • Internal heat exchanger made of electrolytic copper aluminium.
  • Ventilated refrigeration, specially projected for each cycle, for a balanced and even temperature redistribution.
  • High-powered refrigerating unit with either air or water condensation. Both installed at a distance on request.
  • Interior light.
